Italian Hamburgers have been a staple at get-togethers and Holidays for generations in Damon’s Italian family.  Although known in some parts as a “Hot Dago”, his ancestors would spin in their graves if we referred to this tasty sandwich by that name. 

Our recipe for Smoked Italian Hamburgers utilizes the flavors of the smoker to enhance this recipe passed down to me by generations of amazing Italian cooks from the Old Country.  Fire up the smoker and slow-stew the Marinara….Buon Appetito!

Smoked Italian Hamburgers


  • 1 ½ pounds ground beef
  • 1 pound Italian sausage
  • 1 cup Italian style bread crumbs
  • 1 cup grated parmesan cheese
  • 2 Tbsp. Italian seasoning
  • 1 Tbsp. fennel seed
  • 1 medium onion (chopped)
  • 6 hamburger buns
  • 6 slices Provolone Cheese



  • 15 oz. can tomato sauce
  • 6 oz. can tomato paste
  • 2 garlic clove (minced)
  • 1 large Tomato, crushed
  • 2 cups grated parmesan cheese
  • 2 Tbsp Italian Seasoning
  • 2 Tbsp Fresh chopped Basil
  • 2 Tbsp Fresh chopped Oregano
  • Salt & Pepper to taste.


  1. Combine ground beef, Italian sausage, bread crumbs, 1 cup parmesan cheese, 2 Tbsp. Italian seasoning, fennel seed and onion. Form into 6 uniform patties. 
  2. Place patties in 275⁰ smoker until fully cooked (approximately 40 minutes).
  3. Combine remaining ingredients in a stock pot and heat fully, simmer for 20-30 minutes.
  4. Place patties on buns and top with sauce and Provolone.

Yield: 6 Italian Hamburgers
