Apple Bacon Crepes with Candied Walnuts

Crepes can be a sweet or savory dish, filled with a multitude of ingredients, from meats and cheeses to vegetables and dessert toppings. This recipe for Apple Bacon Crepes with Candied Walnuts bridges the gap between the sweet of the apples and candied walnuts and the savory of the salty and smoky bacon.  An ideal Brunch dish, these crepes can be made as a side for a meal or stand alone to fill up the hungriest of eaters.


Apple Bacon Crepes with Candied Walnuts

Ingredients:

Crepe Batter:

  • 1 cup Flour
  • 4 Eggs
  • 1 ½ cup Milk
  • 3 Tbsp. Melted Butter
  • 1 Tbsp. White Sugar
  • ¼ tsp. Salt

Apple Filling:

  • 3 Fuji Apples (peeled, cored, & sliced)
  • 6 Slices of Bacon (cooked & chopped)
  • 1 Tbsp. Butter
  • ½ tsp. Cinnamon
  • 2 Tbsp. White Sugar

Walnuts:

  • 1 cup chopped Walnuts
  • 1 Tbsp. Butter
  • ¼ tsp. Cinnamon
  • 1 Tbsp. White Sugar

Cheese Filling:

  • 1 cup Whipped Cream Cheese
  • ½ cup Honey 
  • 1 Tbsp. Cinnamon

Additional Ingredients:

1 cup Sweetened Condensed Milk


Directions

  1. Prepare crepes 
    1. Whisk liquid ingredients for Crepe Batter until well blended. Slowly whisk in flour. 
    2. Heat a lightly oiled frying pan over medium high grill. Pour batter into pan, approximately ¼ cup for each crepe. Tilt the pan with a circular motion so the batter coats the pan evenly. 
    3. Cook crepe for approximately 2 minutes, until the bottom is light brown. Loosen with a spatula, flip over and cook the other side. 
  2. In a separate pan prepare the apple filling 
    1. Melt the butter in the pan, add the apples and cinnamon, cook down until apples are soft and add the sugar. 
    2. When the sugar has fully dissolved, reserve a few slices of apple to top each crepe, set aside, then add the bacon. Once the bacon has heated fully remove from heat. 
  3. In a separate pan prepare walnuts
    1. Add all walnut ingredients to pan. Cook until walnuts have caramelized and remove from heat.
  4. In a bowl prepare cheese filling
    1. Blend all ingredients well. 
  5. Assemble the crepe
    1. Spread Cheese Filling on crepe.
    2. Top with Apple Filling.
    3. Wrap tightly (do not overfill).
    4. Top with sliced apples and walnuts. (To prevent browning of apples, you can soak in diluted lemon juice.)
    5. Drizzle with sweetened condensed milk.
