Stuffed Mushrooms
Ingredients
- 8 large mushroom Caps
- 1 pound Raw Shrimp, peeled and deveined
- Croix Valley Memphis BBQ Dry Rub
- Croix Valley Italian Booster
- 1 Box, stuffing mix, prepared according to directions
- Parmesan Cheese
- Spray Oil
Directions
- Prepare stuffing according to the directions on the box and mix in Italian Booster to taste.
- Season shrimp in Memphis Rub, spray with oil, and grill over 400-degree grill until shrimp are opaque and cooked through.
- Remove stems from mushrooms, dice and lightly sautee. Mix diced mushrooms with stuffing and set aside.
- Dice shrimp, mix with stuffing mixture and stuff the insides of the mushroom caps.
- Season stuffed mushrooms with additional Italian Booster, sprinkle with shredded Parmesan cheese and place on a grill for an additional 10-15 minutes until mushrooms become tender.
