Ingredients
- 2-3 racks of pork ribs (Baby Backs or Spares), depending upon your preference.
- Croix Valley Dry Rub (or your favorite BBQ rub)
- 1 cup Croix Valley Garlic Buffalo BBQ and Wing Sauce
- ½ cup Bleu Cheese crumbles
- 2 Tbsp Chopped Fresh Parsley (optional)
- Bleu Cheese Sauce
- ½ cup Mayonnaise
- ½ cup Sour Cream
- ⅓ cup Bleu Cheese, finely crumbled and divided in half.
- 6 Tablespoons Whole Milk (or buttermilk)
- 1 Tbsp Fresh Lemon Juice
- 1 Tbsp Chives, chopped
- 1 Tsp Croix Valley Garlic Barbecue Booster Seasoning™ (or your favorite garlic seasoning blend)
Directions
- Remove membrane from ribs and season heavily with Croix Valley Memphis Dry Rub (or your favorite dry rub).
- Grill at 275F until internal temperature reaches 195-200F (4-5 hours). Some people wrap their ribs after they achieve the color they’re looking for to preserve tenderness. This is a matter of personal preference, as we’ve had excellent ribs cooked both ways.
- While the ribs are cooking, combine the Bleu Cheese Sauce ingredients and set aside.
- Toward the end of the cook, baste the ribs on both sides with Croix Valley Garlic Buffalo Sauce, and let it set (10-15 minutes).
- To serve, drizzle ribs with Bleu Cheese Sauce and top with Bleu Cheese crumbles and chives. Enjoy!
